Creamy Oats & Peaches

This is a wickedly creamy way to start the day. The velvety richness of yogurt, sweet peaches, tartness for cranberries, chewy oats and crunchiness of the nuts makes for an awesome blend of taste and textures. Not to mention a powerhouse of phytochemicals in the ginger and cranberries, satiating soluble fibre from the oats, protein from the yogurt and healthy dietary fats from the nuts. Good MODA Morning!


Serves 1


Ingredients:

  • ¾ cup plain Greek or Icelandic Yogurt

  • ½ cup rolled oats

  • 1 medium or large ripe peach cut up in cubes or sliced (fresh or frozen will work), reserve some for garnish

  • 1 ounce nuts of choice (walnuts, almonds or pecans all work well), reserve a few for garnish

  • 4–5 fresh or frozen cranberries, cut in half (you could substitute dried cranberries)

  • 1 ounce raisins or currants, reserve a few for garnish

  • ¼–½ teaspoon dried ginger

  • Tiny pinch of salt

  • ½ teaspoon of teff for garnish (optional)

Directions:

Combine ingredients in medium size bowl. Garnish with teff, reserved peaches, currants or raisins and nuts. Enjoy
