Tony's Super Simple Greek Salad Dressing

This is a super easy and flavourful dressing that is sure to please everyone. I like to make up a batch of this dressing using a Mason jar and store refrigerated and use when needed. Toss this dressing with your favourite greens, cucumbers, red onions and tomatoes. Top with little feta and olives. This makes for a great lunch served alongside some smoked salmon or kebobs. Or this salad can accompany a heartier dinner — perhaps a homemade lamb burger?


Makes 1/2 cup


Ingredients:

  • ¼ cup cold-pressed extra-virgin olive oil

  • ¼ cup red wine vinegar

  • Juice of one lemon

  • 1–2 tablespoons Dijon mustard

  • ½–1 teaspoon dried oregano

  • ½–1 garlic clove, finely chopped

  • Pinch of fine sea salt to taste

  • Black pepper to taste

Directions:

  1. Combine all ingredients in Mason jar.

  2. Refrigerate until needed.

  3. Serve over your favourite salad greens and veggies, top with feta and some olives.
